Butter Lettuce, Pomegranate & Goat Cheese Salad with Green Goddess Dressing
Ingredients
- 4 cup Butter lettuces, cleaned and hand torn
- 1 Avocado, peeled, sliced and drizzled with olive oil and citrus juice
- ¼ cup Toasted sliced almonds
- 1/3 cup Pomegranate Seeds
- 4 oz Montchevre Goat Cheese Crumbles
- 1 cup Kettle Chips, gently hand crushed
Green Goddess Dressing:
- 2 scallions
- 3 cloves garlic
- ½ hot house Cucumber
- 1 bushel Mint
- ½ bushel Cilantro
- 1 bushel Dill
- 1 lemon, zested and juiced
- 2 small or 1 large Avocado
- 1 cup Dairy Star sour cream
Directions
- For the dressing: Place all the herbs and garlic in a blender and process until broken down. Add lemon juice, avocado and sour cream and process until smooth.
- Place the Butter lettuces, avocado, pomegranate seeds, toasted almonds and crushed kettle chips in a large salad bowl and toss. Top with the goat crumbles and toss once more, gently. Drizzle with Green Goddess Dressing.
