Butter Lettuce, Pomegranate & Goat Cheese Salad with Green Goddess Dressing

Ingredients

  • 4 cup Butter lettuces, cleaned and hand torn 
  • 1 Avocado, peeled, sliced and drizzled with olive oil and citrus juice 
  • ¼ cup Toasted sliced almonds
  • 1/3 cup Pomegranate Seeds   
  • 4 oz Montchevre Goat Cheese Crumbles 
  • 1 cup Kettle Chips, gently hand crushed

Green Goddess Dressing: 

  • 2 scallions
  • 3 cloves garlic 
  • ½ hot house Cucumber
  • 1 bushel Mint 
  • ½ bushel Cilantro 
  • 1 bushel Dill
  • 1 lemon, zested and juiced
  • 2 small or 1 large Avocado 
  • 1 cup Dairy Star sour cream

Directions

  1. For the dressing: Place all the herbs and garlic in a blender and process until broken down. Add lemon juice, avocado and sour cream and process until smooth. 
  2. Place the Butter lettuces, avocado, pomegranate seeds, toasted almonds and crushed kettle chips in a large salad bowl and toss.  Top with the goat crumbles and toss once more, gently. Drizzle with Green Goddess Dressing.
