Garlic & Herb Mashed Potatoes with Goat Cheese

Ingredients

  • 10 medium yellow or red potatoes, cubed, skin on or off depending on your preference
  • A few stems of fresh thyme
  • 1 head of garlic
  • 3 tablespoons olive oil
  • Salt
  • Black pepper
  • 1 4-ounce log Montchevre Garlic & Herb Goat Cheese
  • 2-3 tablespoons butter
  • 2-3 tablespoons cream
  • Finely diced chives for garnish

Directions

  1. Preheat the oven to 375 degrees F.
  2. Trim the tops from garlic heads to expose the cloves.
  3. Put garlic exposed-side up in a pan and coat with salt, pepper and olive oil. Cover with foil and roast for 40 minutes.
  4. Remove from oven. Once they cool, use five roasted garlic cloves for this recipe and save the rest for another recipe.
  5. Add lots of salt, thyme and roasted garlic to a pot of cold water. Add cubed potatoes and boil until potatoes are soft.
  6. Strain. Save the garlic and thyme.
  7. Let potatoes come to room temperature in a bowl.
  8. Meanwhile, add the goat cheese, cream, butter and thyme to a saucepan. Heat on low until everything is completely melted and warm.
  9. Add goat cheese mixture to bowl with room-temperature potatoes.
  10. Mash with a potato masher until chunky.
  11. Top with chives and serve
