Ingredients
- 6 jumbo eggs, beaten
- 1/4 cup heavy cream
- 2 Tbsp vanilla extract
- A pinch of Salt
- 2 oz whipped cream cheese, soft
- 4 oz Montchevre goat Cheese, softened
- 1/3 cup Powdered sugar, sifted
- 12 slices brioche bread, about 1/2-inch thick
- 6 oz fresh berries, washed and cleaned, slice any large berries in half
Directions
- Preheat griddle or large nonstick saute pan.
- In a medium bowl, whisk together eggs, cream, vanilla, cinnamon, pinch of salt and sugar until well combined.
- In a small bowl combine the softened cream cheese, goat cheese and powdered sugar until whipped and smooth.
- Lay 6 slices of bread out and lightly brush egg mixture around edges. Press a "pocket" in the middle of each slice of bread for the filling. Heap a Tbsp of goat cheese on top of each pocket and spread well to coat. Top with a small handful of berries for each slice.
- Take remaining 6 of bread slices and brush the edges with egg mixture. Place on top of bread with filling and seal edges with fork. Dip stuffed bread in the egg mixture and place on sprayed griddle or in a sauté pan; cook for 6 to 8 minutes, turning once, until lightly browned. Sprinkle with cinnamon and/or powdered sugar
