Ingredients
- 4 tablespoons of softened unsalted butter
- 2 tablespoons of honey
- 1 peeled, seeded and sliced in half large butternut squash
- 2 teaspoons of sliced chives
- 2 teaspoons of finely chopped fresh sage
- Crumbled Montchevre® Goat Cheese
- Salt and pepper to taste
Directions
- Preheat the oven to 425°.
- In a small bowl mix together the butter, honey, salt, and pepper until completely combined and set aside.
- Slice the butternut squash into thin slices without completely cutting through to have them form the appearance of being “Hassel back.”
- Place the butternut squash slice side up on a cookie sheet tray lined with parchment paper and generously spread the honey butter all over the top.
- Bake in the oven at 425° for 20-25 minutes or until lightly browned on top and cooked through.
- Garnish with chives, sage, and crumbled Montchevre® goat cheese, and serve.
