Ingredients
- 8-ounce log of Montchevre goat cheese
- ½ cup of pitted kalamata olives
- 2 tablespoons of capers
- ¼ cup of sliced roasted red peppers
- fresh rosemary leaves from 1 sprig
- ½ teaspoon of crushed red pepper flakes
- 1 cup of olive oil
- salt and pepper to taste
Directions
- Divide the goat cheese log into 16 small chunks and roll each one into a ball-like form. Place them in a medium-size bowl.
- Next, add in the olives, capers, peppers, rosemary, red pepper flakes, olive oil, salt, and pepper, and mix gently using a spoon.
- Transfer the mixture evenly into 8 ounces jars and marinate in the refrigerator for at least 4 hours.
- Serve with crostinis.
