Mediterranean Marinated Goat Cheese

Ingredients

  • 8-ounce log of Montchevre goat cheese
  • ½ cup of pitted kalamata olives
  • 2 tablespoons of capers
  • ¼ cup of sliced roasted red peppers
  • fresh rosemary leaves from 1 sprig
  • ½ teaspoon of crushed red pepper flakes
  • 1 cup of olive oil
  • salt and pepper to taste

Directions

  1. Divide the goat cheese log into 16 small chunks and roll each one into a ball-like form. Place them in a medium-size bowl.
  2. Next, add in the olives, capers, peppers, rosemary, red pepper flakes, olive oil, salt, and pepper, and mix gently using a spoon.
  3. Transfer the mixture evenly into 8 ounces jars and marinate in the refrigerator for at least 4 hours.
  4. Serve with crostinis.
