Goat Cheese Blondies

Ingredients

  • 2 sticks melted unsalted butter
  • 4 oz log very soft Montchevre® Goat Cheese + crumbles for garnish
  • 1 cup of brown sugar
  • 1 cup of sugar
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • 2 cups of flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • Pinch of salt
  • 1 ½ cups of white chocolate chips
  • ½ cup of crushed pecans
  • Ice cream and caramel for serving

Directions

  1. Preheat the oven to 350°.
  2. In a large bowl whisk together the butter, 4 ounces of goat cheese, sugars, eggs, and vanilla until completely combined.
  3. Next, whisk in the flour, baking powder, baking soda, and salt until combined,
  4. Fold in the chocolate chips and pecans just until mixed in.
  5. Transfer the batter to a 9x9” greased pan and bake at 350° for 45-50 minutes or until browned on top and firm in the center.
  6. Cool completely to room temperature, slice and serve with ice cream and caramel
