Goat Cheese, Fig, and Prosciutto Sweet Potato Toast

Ingredients

  • 1 small sweet potato (or ½ large), cut into ¼ inch slices with a mandolin
  • 4 oz. Montchevre® Goat Cheese Log, plain or honey
  • Prosciutto slices
  • Figs, stems discarded and sliced
  • ¼ cup salt and pepper pistachios, crushed
  • Honey, to drizzle
  • Extra virgin olive oil
  • Grey sea salt (or coarse sea salt), to taste

Directions

  1. Preheat oven to 400 degrees.
  2. Brush both sides of sweet potato slices with extra virgin olive oil. Season with sea salt.
  3. Place on baking sheet and bake for 28-30 minutes or until bottoms turn golden brown. Remove from baking sheet. Spread Montchevre Goat Cheese onto each potato slice.
  4. Top with a slice of prosciutto and fig slices.
  5. Sprinkle pistachios on top, drizzle with honey, and serve.
