Ingredients
- 4 small diced tomatoes
- 1 seeded and small diced jalapeños
- ½ peeled and small diced yellow onions
- juice of 1 lime
- ¼ cup of chopped cilantro
- 4 corn tortillas
- ½ cup of warmed pinto beans
- 8 strips of crisp cooked bacon
- 4 fried or hard-boiled eggs
- 1 peeled, seeded, and sliced avocado
- ½ cup of shredded Montchevre® Goat Cheese, Cheddar Style
- Salt and pepper to taste
Directions
- Salsa: Add the tomatoes, jalapeños, onions, lime juice, cilantro, salt and pepper to a medium size bowl and mix until combined.
- Add the corn tortillas to a plate and layer up as followed: beans, bacon, eggs, sliced avocado, salsa, and shredded cheese.
- Served with sliced limes and extra cheese and salsa.
