Ingredients
- 1 cup graham cracker crumbs
- ⅓ cup melted butter
- 8 ounces of softened cream cheese
- 4oz softened Montchevre® Plain Goat Cheese
- ½ cup of sugar
- 2 eggs
- Assorted fruit and balsamic glaze for garnish
Directions
- Preheat the oven to 350°.
- In a bowl mix together the graham cracker crumbs and melted butter until combined.
- Evenly distribute the graham cracker crumbs between 8 4” tart pans and pack it in tight to form a bottom crust. Set aside.
- Add the cream cheese, goat cheese, and sugar to a stand mixer with the paddle attachment and mix on high speed for 5-7 minutes or until light and fluffy.
- Next, add in 1 egg at a time until completely mixed in.
- Evenly pour in the cheesecake batter between the 8 tart pan and then transfer them to a cookie sheet tray.
- Bake at 350° for 20-22 minutes or until lightly browned on the edges and firm in the center.
- Cool to room temperature and chill.
- Serve with assorted fruit and glaze.
